I'm well aware of the brewing profile for Black Cat, as specified through/by Brad Ford., Canada's Intelligentsia rep & have posted it in other threads..

Thanks for the info.  I am looking forward to getting another order in.  Jay and the rest of you have been very helpful.   And thanks for re-posting the brewing profile for this coffee.  I will print it off and put it in my "Black Brew Book"

I just finished off two lbs of black cat (one lb of decaf, one lb of regular) that had (I believe) a roast date of 3/18 and I got excellent results clear to the last pull.  Excellent crema, and even my wife commented on how deep and "chewy" the flavor was (and she's not a coffee geek at all).

I pull mainly ristrettos with a triple basket and a PIDded silvia set at 228 SV.  Not sure what that corresponds to at the brewhead but it gives me nice rich deep flavors with a little bit of "bite" to them.
