I just finished off two lbs of black cat (one lb of decaf, one lb of regular) that had (I believe) a roast date of 3/18 and I got excellent results clear to the last pull. Excellent crema, and even my wife commented on how deep and "chewy" the flavor was (and she's not a coffee geek at all).
I pull mainly ristrettos with a triple basket and a PIDded silvia set at 228 SV. Not sure what that corresponds to at the brewhead but it gives me nice rich deep flavors with a little bit of "bite" to them.
