I have had a few problems with aeropress. You may help me.
1/ Can I use just boiled water? I was told by one expert I may destroy coffee by this water. I should wait with my boiling kettle at least 4-5 minutes (95-96 celsius). However, many good roasters on the internet use just boiled water.
2/ I started to use hario mini mill with my aeropress - 9 declicks, 16g of pretty consistent grind (I guess it is similar to drip coarseness or just bit coarser), 250ml water with 104 TDS, no blooming. What contact time would you recommend me with this setting? I would like to not waste my coffee on experimenting so much (If possible I dont want to grind more than 16grams and change my hario mini mill setting ). I tried 90s with quality Ethiopian coffee and it was bitter. :-/
