I've read a lot of differing opinions on this. I believe Netphilosopher will tell you to stir. Others I have read swear that stirring agitates the coffee and causes slight over-extraction. Personally, as a less discriminating coffee drinker than many here (though one who does appreciate a great cup!), I have trouble telling the difference. I have settled on a routine of using my pour to agitate the grounds to get some stirring effect without use of a bamboo paddle or chop sticks or some other stirrer that may cause more agitation. Seems to work well for me.

I think stirring is useful and should be done sparingly early in the extraction. My reasoning is from pouring a small amount to wet the grounds, the bloom phase suspends a fair amount of grounds in its foam. I've found that I cannot sufficiently fully wet all the grounds just by pouring the rest of the water in. I always stir after about 1 1/2 minutes extraction. I bloom 20 seconds, then fill the rest of the water, trying to wet all the grounds. If I then stir right away, I find there's often a second bloom-like phase that re suspends some grounds...hence the 1 1/2 min wait. I think Steve (netphilosopher) operates very similar, but should let him speak for himself.

Grind fine. After pouring water calmed a bit after boiling stir with spoon for 30 seconds. Put plunger in not pressed down. Wait 4 minutes. Give it a few swirls. Press slowly. Pour.
Been doing it the above way for 10 years without fail. Always a great cup.
