Actually, the thought of centrifugal force already crossed my mind before but only because I figured that particles get thrown away when they get caught up in the teeth of the burrs. I'm wondering more about the central part of the burrs where there's nothing for a bean to latch onto and propel itself towards the teeth.

Gravity does play a role, which is why you get popcorning when there is an insufficient column of beans in the grinder throat. Generally, though, the bottom burr is the one that's spinning and the burr mounting plate provides the acceleration towards the grinding surface of the burrs. Think of it as a giant Tilt-A-Whirl carnival ride where, instead of being held against the walls of the wheel by centripetal force so they can drop the floor out from under you, you get fed through a grinder, dropping the floor out in an entirely different way.
