I'm new here but let me say that I have learnt a lot from this forum, just from lurking.
Up until now I have always went out for my coffee, that is until having recently decided to try and make my own.
I picked up a gaggia classic and tried pre ground beans from the supermarket. This was a massive fail. The best extraction I could get was 30ml in 14 seconds, the resulting liquid was not fit to wash dishes with.
Since I have now got an em0480 grinder, I have a few questions.
What is a good setting to start dialing in from? I was thinking of starting at the finest and working back from there but I have read that these grinders can vary a bit in terms of grind size.
Does anyone have a similar setup? Why works well?
Also will the beans be ok sitting on the hopper for a week or so? As the hopper is clear I am unsure as to whether or not light affects the beans at all.

There's no general rule as where to start when dialing a grinder. For espresso it should be at the finer end of the possible setting. After that it's mostly trial and error. What is important, however, is to keep all other parameters that influence percolation time consistent, i.e. dose and tamping pressure.
Dialing in a grinder can be time and bean consuming. Also what you need to know is that the required setting can change from day to day (sometimes even within one day) depending on humidity, for example, or aging of the beans.
