I have been trying to brew coffee at the office, but any method I use results in below average brews, as my office hot water dispenser comes out at 180ºF and is usually at or below 170º when I pour. Using an electric kettle at the office is a pain, so I'm wondering if anyone knows if it is possible to/how to increase the temperature of the hot water dispenser on my office water cooler.

At work I get hot water from the tap of a nesco coffee brewer. It isn't nearly hot enough either so I microwave it up to boiling which is roughly 45sec for the amount of water I get. You could try microwaving into an intermediate vessel.

Ya beat me to it. The Aeropress is good with cooler temps, other methods .... not so much.
If a electric kettle is too much hassle, I have to wonder..... are you grinding your beans for each cup? I would guess not. Fresh ground, Fresh beans will make a huge difference. Ground coffee is stale for espresso in about 15 minutes, for other methods, you might get half an hour. Preground coffee is hopelessly stale long before you use it, regardless of the water temp.

Yes..its possible to adjust the temperature of the water dispenser (at least the one at our workplace has the feature!!) It was installed by Samantha Springs, they explained us well the procedure of temperature adjustment. why don't you consult the service provider?
