I'm looking for a plastic tray/boat that will hold a pound of coffee, preferably one with some sort of pour spout. The shop where I used to work had one but I don't really know what to search for.

Would you be opposed to a pitcher or a tub? I'm thinking either a plastic pitcher, or a take-out tub would be good, as the former will be dead easy to find, the latter is cheap and flexible for pouring.

How about a 4 cup plastic measuring cup. Not a tray or boat of course but easier to find.

.....No matter where you go, there you are...

Tupperware type vessels, various sizes and shapes. "Juice" types usually have spouts.
