Thanks for your detailed posts. The problem that I'm wrestling with is getting the right grind from my HMMS. Just this morning I used my HMMS set at 9 clicks. The beans were Terroir Konga Yigracheffe, water at 200 deg F, 25 gms of beans, 320 gms of water, Hario V60, Hario Buono. The total time it took for all the water to go through was perhaps 4 minutes. The grounds left looked like mud. I thought that the coffee tasted very good, but it was missing a lot of the subtlety. I tried the 5.5% ratio with some Bird Rock Columbian Decaf last night (18 gms of coffee and 327 gms of 200 deg water) and an HMMS at 9 clicks. While it tasted good, I thought that it was too weak. When I've tried to back off the number of clicks to 12 the coffee still took a long time to go through (on the order of 3:30) but it tasted weak. Any suggestions?
I'm less experienced with pourover - I use the top basket for a BCM-4 Melitta/Gevalia Kaffe, but I have noted that if you are using the HMMS unmodified, your long pour-through times are probably due to dust (Jerry calls it very appropriately "micro mud" ). Those are my observations. Unmodified HMMS, you will have large amounts of dust in the grind, and the larger the grind the more spread out the distribution of the particles.
Unmodified HMMS at 12 clicks, I've noted in the past that the distribution has huge ~2mm boulders, a bunch of 1mm particles and a bunch of <500 micron particles and dust. Less dust than a grind set at UHMMS-8 or UHMMS-9, but substantially more dust than a MHMMS-13.
I'd guess it's the bi-modal distribution of particles that is getting you - coarse grind to try and get the contact time down has too much of the grind needing a long contact time (a pesky contradiction). Fine grind to get the contact time longer for extraction may have too much dust, pushing toward well-developed but overextracted (and overshadowing subtleties in the flavor profile).
Try 19g with 320g, and push the grind to 8 declicks or 7 declicks. This may narrow the particle distribution enough to get you something you can work with.

The first one, "How much coffee," is especially useful. I followed your math and came up with the exact ratio I needed to give me a good brew. I experimented with press pot, Aeropress and nel-drip pour over, and all of them tasted excellent. Perhaps your new signature should be: "The numbers don't lie!"

Hope this helps a bit. The upper and lower bearings measure about 6.2mm diameter, the central drive shaft only 5.7mm. Thread pitch is about 1.0 metric.

Specifically, what is preferred setting for Aeropress filter grind that the Aeropress Champions recommend? How many clicks from the right when the Aeropress is fully locked in and the farthest it can go?

What kind of tape are you using? I tried performing this mod and the tape (I've tried gaffers, electrical and masking) shredded within one use and went everywhere in the shaft. Would love to successfully execute this mod and remove some of the dust in my grind :)

All these posts about modifications of the HMMS are great. It would really be great if we could get the Hario engineers to look at them and incorporate some changes.

It depends on the particular user. They can also vary the filter material, so it really depends.
I've settled on about 15 declicks, around 550micron (5.5 setting on a Ditting)

I use scotch tape. I originally used hi molecular weight tape, and it worked really well for many months, but eventually worked out of place for the upper bushing. I re-apply it about every 3-4 months as it wears.
I think the best solution would be to increase the shaft diameter to 6.2mm from 5.7 mm. But, this is not easy.
