I am, as I'm sure almost everyone here is, very particular about my coffee.  I've tried roasting my own beans, waiting the 48 hrs. for them to "age", grinding them with a decent Burr grinder right before brewing, using 2 heaping Tbsp of coffee per cup, etc..however, I can't seem to get that coffee house taste from the coffee I brew at home.  I've tried the drip, press pot, etc..but no matter how much coffee I add, I can't seem to get that balance between nice and strong, and bitter.  So my question is - how do you brew?  What is your secret to getting that "perfect" cup of coffee at home?  Specifics, brands, etc. are all very much appreciated.  I hate to mention *bucks, but I've found myself buying their coffee fairly often recently because, for some reason, it tastes better than what I'm brewing! :(

Let me preface my comment by saying I dislike starbucks coffee.  I can only drink their mocha, because the milk and chocolate cover up their over-roasted coffee flavor.

I get amazing coffee at home.

How are you roasting?  Are you positive your roast is good and also EVEN?
I rarely rest more than 12 hours before I start brewing with those beans.

I have a $20 melita burr grinder...it does a sub par job, but my coffee is stellar.

You say you like Strong coffee and mention starbucks.  Perhaps you need more than 2tbsp per cup?  Maybe you're roasting 'right' and instead need to roast 'hella dark' like $tarbuck$

I'd stick to the press pot for now...drip coffee just always seems thin to me...and your home drip machine likely isn't up to snuff with the coffee house's drip machine (or however they prepare it).

I concur, I'm not at all fond of "Charbucks" either. I'll just add that if you like your coffee strong, you might try the Bialetti( www.bialetti.it )Moka Pot-for espresso-strength coffee. It took me awhile to get professional-type results too...to an extent you just have to rely on 'your own' tastes. I had a tough time getting a good espresso-type roast-for my Bialetti-but I've Nailed it now & I can pretty consistently beat(IMHO)Anything the mermaid serves - be it in the Moka Pot, French Press or manual pour-over.(Not to blow my own horn.;-))

I have tried several different methods of making coffee, french press, drip filter machine and espresso machine.
The only method that I really love is my espresso from Miss Silvia and ground on my Rocky from freshly roasted beans from my Corretto roaster.
The other methods produced ok coffee to my taste but lacked the oomph that a good espresso or espresso based milk drink produces.

Just to eliminate all possible variables, why not buy some professionally roasted beans from a respected source and see how that coffee tastes.
