As I was brewing my Brazil from Sweet Maria's this morning in my Chemex I got to wondering.

In any drip method some of the coffee is in contact with the water for only a few seconds. Granted, this coffee drips out stronger than the stuff that drips out in the last minute or so. It mixes and comes out to the right strength.

In a French press you have total infusion--all the coffee stays in contact with all the water the whole time.

How's about this: brew in a French press, press, then pour the bodied brew into a Chemex filter. It would be a total infusion/filter brew.

Anybody tried it? Any difference?

When I visited with Jim Schulman in Chicago, he was brewing using something similar -- He places the grounds in a tall insulated mug, lets them steep for 4 minutes, then pours them out into a melitta pourover filter, and into the cup. I liked the flavor very much.

Well give it a taste trial and let us know  :)  Only differences I'd expect would be fewer fines in the cup, but at the expense of fewer coffee "oils" since a paper filter would prevent the transfer of such into the final cup.

As usual Jim is spot-on... Just tried this with a gold filter and a fine drip grind... one of the best cups I've had in a while. Rich like FP, but much cleaner. Thanks Dana for passing this along.

I do something similar and love the flavor.

Only, I actually wrap a hario vac pot cloth filter around the mesh of a 3 cup bodum FP.

I do the usual steep time with the usual coarse grind, but this also allows me to do much shorter steep times with finer grinds.

When you press down after the steep, there is a fair amount of resistance, and you end up with all the flavor but with a complete absence of fines!

ok. got some yummy Guatemala and Kenya.
Tried 'em last night in the press then poured into the Chemex filter. Just not really diggin'. The mouthfeel was clean (obviously), but it seemed to have some whack flavors in the mix.

Maybe I'll try again with a shorter steep time in the press. After all, I steeped in the press for 3.5 - 4 minutes, then, surprisingly, it still took a couple more minutes to drip through the Chemex filter. Maybe the fines overextracted while in the filter.
