A little breakdown for you on this:
In the first 5 minutes, you wouldn't see extensive flavour loss. The main loss of flavour occurs over time through the loss of aroma escaping through the top of the pot. This does begin immediately, and continues for the life of the coffee. The same occurs in thermal pots....as you remove coffee from the pot into a cup, there is more room left in the pot for air, and hence, more room in the pot for aroma loss from the liquid coffee.
When coffee sits on a hot plate, it burns, plain and simple.......not recommended
I have no idea if cool coffee experience more chemical changes, I tend to toss it down the sink at that point.
I'm not sure why you would heat up yesterdays coffee in the microwave even if you are adding cream and sugar (a sin in itself!!)

The heat being left on degrades the brewed coffee. The oils are the main victim, and is just one reason the aromatics are lost, and why it gets bitter/burnt tasting after it sits.
when I make coffee, it goes into a sealed thermal carafe or thermos, and gets no additional heat added so the coffee 'keeps' longer.
