Subject: Follow-up - Using a Better Grinder

I had a recent post where I asked if I would notice a difference with a better grinder.  I am able to answer that question now.

One week ago I received my new Baratza Encore grinder.  I used my Dunkin beans (surely not fresh), set grinder to 23.  Brewed in Brazen as typical (200 deg, 45 sec pre-soak).  For me, the cup was significantly smoother than when using my previous MR. Coffee burr grinder. It actually tasted more like the cup you would get at DD.  

Then, I took some posters advice and sought out a local micro-roaster.  Not much to choose from here in Orlando, but luckily I found Lineage Coffee.  Purchased a bag of Ethiopia coffee that was roasted the day before.  To be fair, I made a small pot grinding with my MR Coffee grinder, and with the Encore.  As I said before, I'm no expert, but the fresh roast tasted good with the Mr Coffee, but had a much more pronounced complex flavor with the Encore.  

One thing I have noticed is that when i grind these beans with the Encore, I see a lot of lighter colored pieces that sort of look like coffee skin (?).  Dont get that grinding with the MR Coffee.  

The one advantage the MR Coffee had was a dial that I could set to allow me to dispense the standard amount of coffee i need to grind for my regular amount of coffee I brew. This allowed me to keep the beans in the grinder bin.  With the Encore there is no such timer, so I have to put the beans in before I grind.  Not a big deal.  So, yes there is a noticeable improvement in the brew quality with a better grinder, even to a relative novices taste buds.

Yeah, lack of timer or any sort of measurement on the Encore is due to it's "entry level" design. Don't get me wrong, I own an Encore and it is a very capable grinder, but I just weigh the beans before I put them in the hopper. The grinder itself retains very little grinds, on average maybe a gram, so you can go off of initial weight without much concern.

As for the "skin" you're seeing, you are spot on. It's the chaff, or silver skin, of the coffee. The majority of it comes off during the roasting process, but depending on how dark (or light) the roast, you'll have varying amounts of it. Usually lighter roasts tend to have more but it does absolutely nothing to the brewed coffee itself, so don't worry much about it.

Glad to hear that you're enjoying the new grinder. Be prepared to see how deep the rabbit hole goes...
