I've recently started brewing with the Hario Woodneck pourover brewer, and I'm starting to get some results that I'm really happy with. The cloth filter does what it's touted to; I get a fuller body in my coffee, like the press pot feel I like, but without the sediment, so I can drain it to the last drops. Fruity flavors come through nicely, too. My Aeropress may not see any use for a few months.
There is one problem I've had, though. Every cup, even the best that I get out of it, starts out bitter. The main part of the cup may sparkle with fruity notes and have a full, rich mouthfeel, but the first sips are always extremely bitter. I don't know what would cause this, in terms of technique, because I'm new to pourovers. Again, most of every cup may be fantastic, but those first sips.... Any ideas or suggestions?
I don't think this is particularly unusual. Perhaps oils from the early issue floating on the surface? I'd give the brew a really good stir in the carafe, from top to bottom as well as around. Really break up any layers, You could pour the first 1/4 cup away? (Seems a waste though).
That occurred to me, but it seems like pouring from the carafe into my mug ought to stir it up enough to break up any concentrations of oils. I'll have to give it a try, though. I also need to try removing the filter and grounds before the final drawdown- I've read that some of the top baristas using these never allow the last bit of brew to make it into the cup.
