I've read some of the older threads about a reduced flow sprayhead. Called Bunn tech and didn't find them very helpful at all contrary to what I've seen posted. Mine is a 5 hole with hole size of .070 so I ordered one off ebay that is 5 hole with a hole size of .057. I just hope it fits this unit. Tried plugging two holes but some of the grounds didn't get saturated. Maybe I'm expecting too much from a drip (haven't used one in years) but my v60 and aero press make a much better cup. I was hoping to match them.
The Aeropress will create a coffee with more body which may be why you prefer the coffee from that device. The Bunns are fairly well known for a fast brew even with the reduced-flow shower head. I have had to clean up a few overlfows on mine. it's a real mess. It gets worse using fresh coffee that blooms. A solution would be to try a metal basket instead of the paper filters which would increase body (theoretically), increase flow speed through the coffee a bit (to help avoid floods), but may add more sludge to the coffee.
