Scales (decent ones that work fine) are around $20, and can do either oz, troy oz, metric, drams... just pick a unit and stick with it.
The ratio depends on the method, but for a drip/percolation/pourover, I'd recommend (your tastes may vary) starting at around 16.5 oz of water per oz of coffee. This will produce a decently strong cup of coffee.
For 6 oz, you need 6/16.5 = 0.36 oz of coffee.
If you're using a Clever Coffee Dripper, AeroPress, French Press, Siphon you should try to use about 2 points stronger (2 points less water) or a Water Brew Ratio of 14.5 to get a similar strength.
for 6 oz, you need 6/14.5 = 0.41 oz of coffee if you're using one of these other methods (though the only ones that really work for only 6oz are the AeroPress and the Clever Coffee Dripper).
Now, keep in mind that this will PRODUCE only 5 1/4 oz of coffee (the rest gets stuck in the grounds). If you want 6 oz in your cup, then just ratio the amounts of coffee and brew water up by ~15%
6.9oz water + 0.42oz of ground Coffee ===>> ~6oz of produced coffee in the cup for a pourover,
And you'd need to bump the coffee (and the adjust the water) a bit more for the immersion method:
7oz water + 0.48oz of ground coffee ===>>~6oz of produced coffee for an AeroPress. (this recipe will actually produce a bit more, but it still works, long explanation on why).
