I've used 400 and 500 mesh stainless for Aeropress filters. They are somewhat fragile (especially the 500 mesh). But I think you'll get excellent results with the Chemex if you treat the mesh with care.

Sweet, in true coffee geek fashion I'll run some tests and post them here. I ordered #325 and #400 316 SS mesh, I'll time the how long water gets through each, and with coffee, keeping all else the same. Depending how it goes maybe we can organize a group buy, though those can be a nightmare.
Anyway, I went with the UK company because I got a free sheet of each with my order, A4 size. With trimming ill have some left over for my vaporizer setup
