I got a clever dripper several weeks ago and I'm still struggling to get a decent result with it.
I'm using about an autodrip grind setting on my Bunn grinder. I start the drawdown at around 2:40 and stop it at 4:00. The drawdown starts off fast and then seems to stall when it gets to about 10% left. The cup I'm getting from it tastes and measures underextracted, tastes pretty sour and unpleasant.
Today I took the same coffee at a slightly finer grind and did a siphon pot with 2:15 total brewing time. Tasted spectacular. I'm unsure why doing a similar immersion brew in the clever at double the time still gives me an underextracted result. I don't think I should try going finer in the grind because I'm already getting stalling when using Melitta filters and going past 4 minutes on the brew time is going to result in more heat loss during brewing.
