The difference using a strike temperature of 205°F and 190°F for a given amount of grounds at a particular grind level and given the same steep (not in a Chemex - in a Clever Coffee Dripper) is a variation of about 15 seconds in 2-3 minutes, where the cooler temperature is a bit longer.
