Subject: Technivorm and Vario
 

I am a new proud owner of Technivorm Moccamaster Clubline.
The grinder i use is the Baratza Vario.
Took a suggestion from a past topic and grinding the coffe at two notches below the middle setting of drip on the far right sclae.
The result,  coffee is weak tasting withour a lot of flavor to.
I am making 600 ml of coffee. And using about 34 grams of beans. This is ratio as to sweetmariasb suggestion.
My beans are fresh from a very reputable roaster.

Can someone tell me what am I doing wrong?  

Is it the wrong grind that i am using on my Vario?

Any suggestions/help will be much appreciated.

That ratio sounds about right.  Do you close off the valve at the beginning to let the grounds infuse a bit?  That helps.

I use a similar setup at my girlfriend's place.  I go one click below the center and use about 67 grams for a 10-cup pot.  I start with the valve closed.  When there's enough water to stir the grounds and force a bloom, I move the carafe to stop the water.  After stirring a bit, I replace the carafe and move the valve to the middle setting.  If the grounds look like they are going to overflow, I open it all the way.

Yes, I do the same thing.  Close the valve off completely, until the basket is filled with hot water.  Then stir the grinds up and then open the filter half way.

You should change the grind setting and find what tastes good to you.  I grind for my Technivorm on the notch above "drip" on the macro, and about 7 down from top on the micro.  My Vario is calibrated to pull a double espresso on the second macro notch down, and around 3 - 8 down on the micro depending on the coffee.YMMV.

Congrats on the Technivorm !   I've been using a kbt-741 for a couple of years  and my Vario-W  is on the way !  


i'd like to add to the "tips and tricks" for the brewing with a technivorm;  

... add an extra cup of water to the reservoir and run it through;  that water serves to heat the metal water dispersion / spray arm so when brewing starts it assures there will be minimal temperature drop in that critical  interval when water first meets coffee.

i can use that first cup to drip directly into my cup (which pre-heats my cup nicely)   and if i have extra time, run it into the filter cone (with paper filter inserted) which rinses the filter......and from there into my empty cup.  The filter rinse thing takes a little manual involvement to do a thorough job.

i have the thermal / steel carafe which is always pre-heated with hot tap water.

i agree that saturating and stirring is a must.  (you can pre-heat a spoon in the cup of water from above and use that to stir).

hopefully my comments will be more on point after the vario gets here. . .

I have the KBTS & a Solis 166 grinder, so my equipment is not identical to yours, but I would agree with JPF and say to change things until they taste good to you.

I would start by changing your grind setting to something finer. If you don't get what you're looking for, start increasing the amount of coffee.

And as nice and smart of a guy as Tom (Sweet Maria's) is, I take exception to his insisting that the TechniVorm needs any sort of extra fussing or attending in order to make an exceptional pot of coffee. The whole point to why I bought a TechniVorm was because they designed it right in the first place, not because they designed it for a completely insane amount of user interaction.

But that's just my opinion....

I use 40 g coffee for 600ml water (and I let the funnel fill, agitate, then open the discharge valve half way).

+1.  I also do not "futz" with my TV.  I will allow the coffee to saturate before opening the brew switch, but that's it.  Also, I believe I remember reading an update on SM's view, and they changed their mind on stirring, etc.......I think!

I would love to grund finer,  but i am using the swiss gold filter.   I tried finer grind with it,  but get a lot of sediment.  Is there a trick to fine grinder and still use the swiss gold?
