Espresso: Quickmill Alexia Grinder: Baratza Vario Drip: French Press/Clever Dripper Roaster: Want a Behmor!

Looking for break from press and espresso so I'm thinking dripper. I love the Chemex but it seems like there are issues with the paper filter. Then I saw the clever coffee dripper, similar issues. Then I saw the single cup brewer at PEETS with the swiss gold filter that's a different shape the the classic cone. How can one get away from the paper filter issue? Is it possible to use the Chemex or CCD with a swiss gold filter? That seems to be the clear solution but I've not seen anyone advise that. The PEETS 1 cup device looks pretty basic and utilizes the swiss gold filter in a much flatter method. Suggestions? Thanks.

I think the whole point of going Chemex is their filters--that's what makes it a distinctive device. I had the same question about the CCD, but I found this and didn't bother trying it myself: Click Here (www.sweetmarias.com)
What are you worried about, paper taste? If you try different brands and wash out the filter before you use it, this problem can be greatly diminished.

Just reread that and eh, not sure I agree with their take on things. The anti-fines tone isn't really doing it for me. So maybe I will experiment myself, after all.

I love my dripper and use it just about every morning.
If your really looking for something fun and different, and don't mind a challenge, vac pot can be a real treat. I usually only brew this on weekends / when I have friends over.

I quit the Chemex with paper. Dreadful. I do, however, use a Bodum gold filter with my Chemex. Works like a charm: 55 grams medium grind coffee with 32 ounces of water total. Water @195F, bloom the grounds with about 8 oz of water. Wait 45 seconds. Pour a very slow and controlled/directed pour, not drowning the beans. Time from first pour to end: 2:45 minutes. Wonderful cup, pictured below.

I also use both Hario and Bee House pourover arrangements with white Melitta oxygenated filters. Absolutely love the cup as well. I review the Hario here. That is the 1-cupper Hario (12 oz) pictured with the Clever Coffee Dripper. There is a 2-cupper out there which found its way to our shelves.

The Bodum Kona is pricey, like $60. How about the Clever Coffee Dripper with a #4 gold filter? That way you get the 4 minute immersion? How about the Eva Solo? Those are pretty nifty but at $100, I'm thinking CCD + Gold Filter. Thoughts?
