But I really get a lot of foam that way; can't state for sure if I'd get as much foam by adding coffee to water that's already heated.  You might want to try making it that way.

For a 2 oz espresso cup, I grind 2 Tablespoons of beans, Peet's Arabian Moccha Sanani.  I get great foam and a bit of fine sludge at the bottom of the cup.

Just ordered 5 lbs of Turkish coffee beans from Tulumba.  Can't wait to try the stuff.
