I seem to remember this picture and your result from a while back. It is what is prompting me to want to move the roast heater even closer to the roast chamber. I am even thinking of putting it on top of the aluminum grate. I know it seems shocking to put it where it can be touched when it is on (roast chamber removed) but if it is powered and one would touch it the electrical shock would be the least of his problems.
I remember an electric cook-top from when I was a child. It was old then. The heating coils were in grooves in a ceramic disc. They could be touched but the fact that they were glowing red would deter most folks. That old cook top is also part of my inspiration.

So far I am really liking this configuration of the Z&D. I no longer have to be concerned with lack of power.
One small glitch was troubling me. The motor speed control is done with some sort of phase control feeding the rectifier bridge for the motor. The glitches from the Harbor Freight box would effect the motor speed as I changed heater power. I was considering EMI filters on the Harbor Freight box. I then realized that I had receptacles on two different circuits at my coffee bar. I plugged the cord for the motor and Z&D electronics into one outlet and the Harbor Freight box into the other. Issue solved!
This fix can be applied to corn popper setups with phase control for the blower and a separate one for the heater.
