Hi guys,
I never really bothered about it because I usually order green beans for maybe 3 months; and as I remember, if the beans are stored in a dry place and closed (like tied-up plastic bag) it should be fine for quite a while. But now I seem to read more and more about green beans being stale and being a possible cause for a bad cup.
Lately, I've ordered a bit more coffee - I'll be good for 6-8 months, this time; and I don't want it to go stale.
So my questions to you:
Which type of container do you use for your green beans, and in which conditions do you store them?

LOl I'm probably the worst person to answer this but I will anyway!
I store my beans in a burlap bag. Either the same one they came in or break them down into 5lb lots. I buy 20+ pounds at a time and don't use them all right away - I roast for self, family, and friends. They've held up well, even after a year or so I am told the roasted coffee is excellent. I'm right now using a borrowed aromaroast since my Fresh Roast +8 croaked earlier this year. I'm having to let the beans rest for a few days, but this might be due to getting used to a different roaster.
Other people I've read suggest using a vacuum sealer and breaking it down to 1-5 lb packages (or "per roast" size packages) and storing them that way.
No matter what method you choose, a cool, dark, place is best.

I am using a vacuum sealer now. I bought a nice one a Costco a couple of months ago. Works great! When I open the vacuum sealed bag, the beans smell nice and fresh!

I use a FoodSaver and vacuum seal my beans in standard mason jars. I'm roasting beans at 2 years old, and most taste quite good. But I really should buy less, and roast the beans sooner.
For my "special beans" such as Panama Elida and Geishha, I try to roast them within 6 months of purchase. There are some subtleties that diminish over time, and I really want to experience all that the bean has to offer.

Fruity beans I will roast to city or city+ will be vacuumed and frozen upone receiving them. The rest I store in a cool dark place for upwards of 1 year from when they arrived in the cargo containers. It is important to know what you are buying and when it arrived, many suppliers will have beans from last years harvest or beans that came in 6-8 months ago.
People make out well when I have a gathering since there is always some beans that are getting older that I roast up and give out.
