Peaberry does roast a bit differently than flat bean, but depending on profile if you will notice a difference. The rounded shape tends to heat more evenly and quickly. If you are pushing the limits on bulk heat ramp during the roast, this will make it less likely to scorch or tip. Like a smaller bean, I tend to notice it will ramp more quickly for a given amount of heat in the roaster.
