Subject: Interesting occurrence with Gene Cafe
 

I've had Gene Cafe for about two months now.  I've roasted a 250 gram batch every two to three days since then.  The batch is always a blend of 125 grams of Brazilian, 62 grams of Yemeni Mocha, and 62 grams of Java.  All beans are new from Sweet Marias purchased with Gene Cafe.  I've obviously done this as a pre-roast blend, which has worked fine.  This has taken about 18 minutes at a 482 temp setting.

However, last week, I began to notice a severe variability in the roast level of the beans intra batch.  For instance, about half the beans were pure charcoal before the remainder of the beans hit the second crack.  This has happened twice.  I then separated the batch into three batches and roasted 200 grams of Brazilian, 100 grams of Mocha, and 100 grams of Java.  None of these individual batches exhibited bean variation in roast level.  The 200 gram batch took about 18 minutes, with the two 100 gram batches taking about 16-17 minutes.  No major difference in roast speed.

I'd love to go back to pre roast blending for convenience.  But, I hate to waste too many more beans.  As an aside, the beans sit in my garage in a burlap bag for the Brazilian, plastic for the Mocha and Java.  All bags are open to the air.  I live in a relatively humid environment (Pacific Grove, California).   I wonder if there have been changes to the moisture content of the beans that would cause this?

Any ideas?

Jon,

Variation in moisture content could very well be your problem.  Try mixing up some of your blends ahead of time and allowing the beans to acclimate together, in the same bag for at least a week prior to roasting.  You may want to then give this profile a try ("Re: Gene Cafe Profiles and Results - Share Yours!") or something similar and see if it helps.  The 5 minutes at the beginning is a drying / warming phase.
