Several months ago I posted some pictures of my modified Z&D on this string. At the time I said that the electrical part was a prototype and the final version would follow.
The death trap clip lead kluges are now gone and a second power cord to plug into the Variac is in place. It is a three wire cord the ground of which is connected to the metal air duct such that the exposed metal of the roast chamber is grounded when the cord is pluged into a properly grounded outlet.
Here is a schematic of the new wiring in PDF form.
Photos of the cord and relay installation will follow if I have any luck with the camera.

I realized that I didn't say anything about the relay except to give the vender and part number on the schemo. The coil is for 120 volts AC and the contacts will handle 10 Amps on a 120 volt circuit.
I will now attempt to attach some photos.
This shows a piece of wood JB welded to the plastic case. The relay is to mount on the wood block.
Sorry it didn't work. The file exceded the 75 kbyte limit. I will try to get someone smarter than me to compress the files and try again.

I don't know what just happened but I'll try again. Here is the wood mounting block for the relay. It is attached to the case with J&B weld.

Here is an outside view where the cords enter. Note that the larger strain relief nearly consumes all of the area in the depressed part where the cord enters. I had to enlarge the original "double D" hole with a Dremel and files to acomodate the new larger strain relief.

Here is the latest addition to my Z&D. Some time back I responded to someones post about getting more heat with the Z&D. I mentiond my "pot holder trick" where I held a pot holder against the metal part of the roasting chamber. I also put in my disclaimer about burned fingers and setting the potholder on fire.
Here is a refinement of the same concept. I made a collar of fiberglass cloth and some old steel strap which I had laying around. I folded the cloth over to get more thickness (and more insulating value). I used a small amount of RTV to secure the folds. I then RTVed it to the metal strap and formed it to the chamber.
I preheat my machine then charge the chamber with beans. I then turn the heater voltage to max. (~140 volts) untill I reach 250 degrees F. Then I cut the voltage to maintain 10Degrees F/minute untill I reach 300Degrees.
Before It took about 2.5 minutes to reach 250 degrees. now it is just about 2 minutes.
