I've just been grinding 45g into little baggies (depending how many days I'm out) and using a french press/mug.. I drink it black, but considering taking along some non dairy creamer or the like (suggestions?), as I like a spot of milk with my coffee, and can't afford to be TOO snooty out in the sticks (literally)..
I've heard the starbucks Via is pretty good.. I'm going to do some side to side comparisons when I can get to the big city and buy some. I'll grind up some coffee, leave it for a day in a plastic bag for 24 hours, go from there..
If it's not too bad I'll make the switch, as it would sure cut down on weight and bulk (relatively speaking), and would be less clean up..

For me it depends on the type of trip.
Luxury trip -- I carry pre-weighed beans in baggies, a hand grinder, a porcelain cup, and either my Aeropress or moka pot. I carry out the spent grounds.
Normal -- Some form of nasty freeze-dried crap. Starbucks is probably the least offensive but it's also the most expensive. So I also sometimes use Medaglia D'Oro, which bills itself as a freeze-dried espresso but in reality tastes more like deep roasted nut powder. Side by side tasting, Starbucks "wins". In either case, sugar and/or creamer (or even hot chocolate mix to make a "Mountain Mocha") is a requirement to make this far distant, barely related beverage to coffee palatable. Hey, at least it's hot! For creamers I usually take the tiny doses of UHT half and half, available where I live as "Mini Moo".

I love my coffee, so on backcountry trips I bring fresh beans, a Hario hand grinder and use a one cup filter. If I am doing a backcountry hut trip, the people put me in charge of coffee. Fresh beans, Hario handgrinder and a french press. I and the people are happy.
The luxury will be the unbelievable great tasting coffee that you would be drinking. Before my daughter left for Alaska, I purchased a Hario Skerton, modded it a bit for the coarser grinds and she took whole bean coffee instead of pre-ground which she had planned. She was finished grinding each morning's coffee before the water was even near boil and she ended up brewing cups for her teammates (as long as they did the grinding). It's definitely worth it.
