Haven't had Stumptown by mail since they ownership change. So don't really know.
Only once have I ever ordered coffee and gotten a date older than I would have expected, i.e., older than about 3 days dated when I received it. And I've ordered from a lot of different places and from both Citizen Bean (expensive but fun) and gocoffeego (less expensive but interesting variety).
I just figure I will remember and not order from them again.
But generally what I have found is that true micro's who roast mostly for a single store sales generally roast once a week, sometimes twice. Larger micros that have larger stores may roast more often and will roast what they need the most of more often.
Large roasters like Stumptown, Intelli, etc, roast every day and multiple types every day.

I order a lot online and home roast. Im not so worried about roast schedules as I am roast dates on a bag I buy. No roast date then no more business from me. You can find a lot of good places here. I think that a good roaster should be allowed to manage their own business and just provide fresh coffee.
Even with roasters that really know what they're doing, I have had to either email or call in order to get their roasting schedule. I understand that some of the larger ones roast almost every weekday, but come on; this is vital information!

Not every roaster knows how much will be ordered.. in fact, do any? I work for a roaster that roasted 80 lbs. of an espresso blend for retail and got an order for 75 lbs. almost immediately afterwards and we went right back to roasting to make up for the order. I would think in this way the coffee is actually fresher because it's roasted on an as needed basis as opposed to customers waiting for the next roast date and coffee already roaster staling because everyone was waiting for the next roast date. Something along the lines of a busy fish market versus a stagnant one.

Depending on the size of the roaster a full schedule may not be what works best for them. With that being said, I can see from a customer standpoint where you would want to know when the coffee is at its freshest when you are ordering. Personally myself I would rather use a company that does not roast the coffee that they will be shipping out to me until I have ordered. This way not matter what day of the week I am wanting coffee, I know that it will always be fresh when it gets here.
