I'm looking for beans for my boyfriend. He likes having his french press every morning, and prefers the following bean characteristics:
medium to light roasts hints of chocolate, caramel low acidity
We've tried Kuma Coffee (he LOVES their honeypot espresso), Intelligentsia (loved the Rugerero Ikirezi from Burundi), Sightglass (they had beans from Burundi he liked), Terroir (he liked the Daterra from Brazil and Montecarlos from El Salvador). Ritual Roasters seems to be too acidic for him, and he didn't seem to like the bag from Klatch, Bard, or Stumptown we got for him.

Klatch has lots of different coffees and there are a few that I don't care for either but they are an outstanding roaster and I think they deserve another try. For espresso, I like WBC or Belle. I find that both of these make a great brewed coffee as well. One I do NOT care for is FTO, it is too close to tasting like dirt to me, different strokes for different folks as they say!

I don't know much about the Seattle scene, but what's up there that you can get locally, from small roasters, not the big box coffee places? Something you can go in and try a cup, or talk to the Barista directly.
I like Klatch - when they brew it. I've never been successful with anything I bring home. Neither has my office mate.
I was in Portland last weekend, and had wonderful coffee from Heart and Ristretto. Verve out of Santa Cruz has a good reputation. Barefoot does awesome coffee, and is better obtained by mail than in person imho.
Just keep trying and try other roasts from ones you like or even call them up on the phone and say, 'he liked this, what else do you have that he might like'. The smaller roasters will be happy for the praise and generally happy to give you the time to discuss it with you.
