I try to explain good coffee by comparing it to wine. Good wine is complex, good, not offensive to the taste, and yet no two wines are similar whether it be year to year or region to region. There is a development that MUST take place in our pallate. I'm sure I pick up on soooo many more flavors now than I did a few years ago. . . . And then there's the Elephant in the room, is the coffee mixed with smoking? That will influence judgments.

Caffeine is very bitter, but it's diluted in a relatively large amount of liquid and masked by other flavors. It's certainly not the primary contributor to bitterness in low-quality coffee. For those saying this is just unfounded opinion, it's not: I did a semi-blind test in which I added an additional ~150 mg of caffeine in powder form into one cup and none into the other. I couldn't tell the difference at all. Granted, it wasn't the most scientific of tests, but it was enough to convince me.

Purchase some really good Sumatra from Counter Culture and brew it for him. It has the least bitterness of all the coffee's in my opinion.
