I think you are looking too much into things. The Coffee community around me is a happy social place. Sure there are secrets, but that's all part of it. What bothers you about everything?

Hello. I have a hobby and it is BBQ. I am willing to share any recipe with others who do BBQ as a hobby. And I am sure that home roasters do the same ... in fact I know they do as seen on CG and other boards.
HOWEVER, if I were professionally roasting I would definitely hesitate to provide an in house recipe to another professional roaster. Its like Coca Cola giving Pepsi their recipe. Or KFC giving out their secret ingrediants for their famous fried chicken.
Remember, alot of trial and error, lots of hard work, etc., go into finding the perfect recipe for a signature espresso. It is not unreasonable for a business not to give it away.

The roasters that I have interacted with where I live have always been more than happy to "talk shop" and share knowledge with a fellow coffee lover. I have been very happy to find such a welcoming scene and have even gotten some custom roasts out of my relationships. I am sure there are things they may not say so openly to any unknown person off the street, but in having known them not once have I ever been told they were not at liberty to share such information. I am sure that as you look you will find plenty of people in the business who are happy to talk about what they do and how they do it.
