Subject: allergic to milk (lactose intolerant)--but love cappuccino
 

I was born allergic to milk--but love to start each day with a cappuccino.  So what's a fellow to do?  I can use milk, but suffer some socially unacceptable consequences.  Have tried frothing lactose free milk, but the taste is well, not too good--actually tastes overly sweet to me.  So I've experimented with several milk substitutes and most don’t seem to have the proper proteins necessary to make the desired small bubble froth.  Finally tried unsweetened soy milk (the kind you find in a store's dairy section) with great success.  I find soy easier to froth than cows’ milk and am now trying my hand at cappuccino art using frothed soy milk. The taste does take some getting use to, but since I have been using milk substitutes most of my life the transition period was short.  The froth from soy milk is so good, I wonder if the secret to some of the absurdly fancy art you see in the photos is using soy instead of cows’ milk?   If any of you out there have experimented with milk substitutes, I'd like to know your your favorites.

Have you tried cow's milk?  I am celiac which usually has lactose intolerance as a partner.

I have found that lattes are no problem for me, while ice cream and cold milk have negative affects.  I think this is because the lactose break down at the temperatures produced by the steaming process.  

If you have already tried and proven this wrong, then forgive me, I never claimed any medical knowledge on the subject.  I'm not a doctor nor do I play one on TV.  I just know that it works for me.

I'm hopelessly addicted to BONSOY, soya milk that comes to the UK from Japan via Australia.

I went without milk for a few years and now find cow juice far too sweet.

It's hideously expensive and frustratingly rare so tread with caution!

Pacific Soymilk is supposed to be easier to steam than regular milk.  That's what a few board members here said.

Pacific Soy Blenders are really good - but it's really hard to find locally.  It's mostly sold straight to coffee shops, I've never seen it at a grocery store (even ones that sell Pacific products).

I was able to find some limited success with soy milk (not art worthy) but absolutely got nowhere with rice milk (prefer the flavor).  Has anybody tried Eden Blend (a combo of rice and soy)?  I used to be able to get it locally, but it is no longer stocked at my local grocery store.  Supposedly less "beany/chalky" tasting than straight soy and more easily digestable.

Cathi, have you tried mixing "Soy Creamer" with the soy milk? Mixing 25%-35% gets me to microfoam every time. Another thing that helps: use VERY cold soy miilk (I chill it in the freezer for a few minutes before steaming), and stop the air infusion and steaming earlier than regular milk (I stop air infusion at 90f, and steaming at 130f).

WhiteWave makes the "Silk Creamer" I use, and I use the Silk regular soy milk.

Here's a capp I made this morning -- nothing special in terms of latte art, but it'll give you an idea of the foam.

How cool is that?  It never occurred to me to try and mix the two!  I routinely keep the pitcher in the freezer, but getting the mix extra cold is a great idea.  Thanks a lot.

Aw, shucks.  Since I wrote that post I had a couple cappuccinos from Stumptown and they were reallyl excellent.  They use Pacific Soy.
