I like coffee, but I'm a tyro, not knowledgeable at all. Nick's article is a real eye-opener (not better than coffee, but...). It's very informative, extremely thoughtful, and delightfully thought-provoking. I love the enlightening and stimulating comparison to wine.
I don't live in D.C. but I live close enough to make a trip to Pennsylvania Avenue (murky coffee) practical. I can already smell the brew!

i agree with much of what was said here about the "third wave", but I am not sure why the espresso method of brewing is promoted as the only or main method of brewing for the third wave.
What about using the Clover or French Press to draw out the flavor of the bean?

Really?
I don't know why recently many people talked to me about the third wave coffee and made both the drip coffee with SO beans and espresso with lighter roasted beans, so both the drip coffee and the espresso were so sour with very weak coffee tastes. They even announced that you may feel like drinking juice instead of coffee when you take their coffee drinks.
In fact, all the coffee drinks were so sour to drink, and it's hard for me to believe whether someone may like to drink it. Is that really what customers expect? If we can only find the truth for the beans as it comes from the origin, do we have to accept whatever it is, good or not? So, we do not have to work, just accept?
