Nice work, Mark. Still. seeing ANY sort of plunger in a siphon seems like reverse evolution...LOL Kidding.
If the RESULT is a brew that can equal a Cona 3 cup...the best coffee I've ever had to date, and NOT a $20 coffee, just a modest El Salvador, then Bully! Bringing the best out of any coffee is a noble enterprise. 190f seems a little on cool side, but i guess the speed of the brew mitigates that?
