"This can be caused by the shot running too fast with a reasonable shot volume" So if you would say that 28ml is a reasonable shot volume, when I say too fast I'd mean an overall pour time of say, 20 seconds. As such, the water has passed through too fast to properly extract the coffee.
"high yield in a normal shot time" So this would be say a 35ml yield in 28 seconds. This means the water is in contact with the grinds for longer and the shot would be over-extracted due to passing too much water through the coffee.
Hope this clarify things, the semantics of espresso extraction are far too easy to get mixed up over (hence the initial revisions).

I just can't seem to stop this and I'm deeply sorry for that but the last seconds of extraction are pretty much irrelevant to the (extraction) yield. There's a point when coffee's given all that it's easily going to give and no matter how much water you push trough it, the extraction yield is going to stay roughly the same. If a shot runs fast, it's probably under-extracted. If obviously under-extracted shot that's flowing too fast is left to run for hours, it still won't turn into an over-extracted shot. Won't post in this thread anymore. I promise :)

Hi there! There are other factor's that follow, which is going to affect your extraction.
1)...After dialing the weight with your scale. (eg...14grams with timed grinder) & set the finesse of the grind. . The next dose will be out by 1 or 2grams.
2)...It depends on the coffee blend ( 2 bean blend right through to a 5 bean blend). Unless it's a single origin coffee. The grind dosage will vary, in so many different way's Because of the nature of the difference of density of each origin, ( eg...Brazil is not as dense as say Kenyan or a Peruvian, Bolivian, and so with so many other Hybrids )
3)...Let us say the blend is 50/50 ratio with a 2 bean blend....it will not be a 50/50 ratio in your ground dose. It will [ 9 out 10 ] be a 60/40, 70/30 evan as high as 80/20 or visa/versa, end result in the dosage. Therefore with a 3 or 5 bean blend, the ratio. ( eg.. 40/30/30 or 40/30/20/10 ratio ) the dose that you think and expect, it will be totally different. The difference will be the grams in the basket, in extraction time and finally, depends how intune your palate, you are going to notice the subtle difference in flavor.
4)...Overall in a fast pace espresso bar, with experience you should be able to identify the idiosyncrasies and adjust accordingly. ( either by sight, odour and taste )
