That reminds me of my journey down the dark side, especially the bitter taste when young. Coffee always reminded me of burnt green beans, then one day in Chicago, wow! Now I have a two group in the kitchen, and the wife is certain I am insane.

Nice read!...so... you have all the technical hoodoo down...lets talk low tech for a moment.......maybe I can help with something else....your beans going belly up so quickly...yes, day 4-5 after the roast day is usually wonderful...but so should day 6-9, IF you are storing your beans properly....just curious, how ARE you storing your beans?...1 way valve bags seem to work well for me, especially for my home roasted espresso SO's and blends...some here use the rubbber gasketed glass jars....what say you?
